Rice N' Peas
Ingredients
- ¾ cup Deepak dried red kidney beans, soaked in cold water for 2 hours or overnight; drain
- 4 cups coconut milk (see below)
- 1 sprig fresh thyme
- 1 hot seasoning pepper
- 4 scallions, trimmed and minced
- 2 garlic cloves, crushed
- 1 tsp salt
- India House black pepper freshly ground
- 2½ cups Deepak long-grain white rice
Directions
Serves 6 - 8
- Put the beans in a colander and scald with boiling water. Transfer to a large saucepan and pour in the coconut milk. Bring to a boil over medium heat. lower the heat, cover the pan and simmer for 45 minutes, until tender.
- Add the thyme, seasoning pepper, scallions, garlic, salt and black pepper.
- Wash the rice, drain and add to the beans. Add 1¼ cups cold water and bring to a boil over medium heat. Lower and heat, cover the pan and simmer for 20 minutes, or until the rice is tender and all the liquid has been absorbed.
- Remove the seasoning pepper and mix the rice and beans together with a fork. Transfer to a warmed serving dish and serve immediately.
- MAKING COCONUT MILK: TO OPEN A COCONUT: Pierce the eyes of the coconut and drain out the liquid. Place the coconut on a cloth on a firm surface and split it open with a cleaver or hammer. Remove and shred the flesh. Remove the brown skin if the flesh is to be used in a recipe.
- MAKING COCONUT MILK: TO MAKE FRESH COCONUT MILK: Purée the flesh and liquid of one fresh coconut with 1 cup boiling water in a blender or food processor, then press through a strainer lined with unbleached muslin, twisting the cloth to extract all the liquid from the flesh (makes about 1½ cups). For a less rich milk, mix the coconut flesh and water in the same way and set aside for 1 hour before straining as above, For a thinner milk, repeat the above process twice, using an additional cup of water.
- MAKING COCONUT MILK: TO MAKE QUICK COCONUT MILK: Use shredded or flaked coconut in the same way as fresh (6 cups shredded or flaked coconut is equal to 3 fresh coconuts), and substitute hot milk for water for richer result. Packaged coconut cream can be mixed with water to make varying thickness of coconut milk. Canned coconut milk is available from health food stores and specialist markets.
